In the past three months since Isaiah’s birth, I haven’t done a lot of extra cooking or baking. Right now, I’m doing well to get dinner made most nights. 🙂 However, I still like my goodies and making what I can from scratch, and on occasion my older two boys will behave and Isaiah will nap or be content long enough for me to throw together a little something special.

As a mom with a newborn, I haven’t only been looking for recipes that are quick and easy, but also ones that could be helpful to my milk supply since our new little guy LOVES to nurse. In the first few weeks especially, I needed healthy, easy-to make and easy-to-eat snacks for both my boys and myself. I found a perfect answer for all of those in the form of simple, customizable protein balls.

I’d seen these little treats, also called “energy balls” or “energy bites,” before online, and I’ve even sampled some that a mom friend of mine had made. However I’d never made any myself. So, I had to find a recipe.

Since protein balls can be made with such a wide variety of ingredients, I wasn’t sure which particular recipe to try from the myriad I found on Pinterest, so I looked for ones with ingredients that I had on-hand, especially ones with oats and flaxseed, since both are foods that can boost a mother’s milk supply.

Once I found a few options, I compared the recipes, used the common measurements of ingredients, and made up my own recipe, following the same basic procedure that all the protein ball recipes followed.

I have made up several batches since then, and my whole family loves them. However, since the protein balls do pretty much give you a boost of energy, I try not to let the boys have them too late in the evening. 🙂

I have also tried a few different variations, such as using different nut butters (I like using both almond butter and peanut butter as the same time) and using either date syrup and/or raw honey as a sweetener (I prefer the date syrup because the honey can make the balls very sweet and a bit stickier).

I think the fact that I can easily adapt the recipe to what I have makes this a fun, almost foolproof snack. However, here’s my favorite way to make protein balls…so far. 🙂

As much as I love summer, there is something to be said about all the crisp weather, cozy clothes, fall fun, and tasty treats that come with autumn. While I love all the apple and pumpkin goodies to be made (Apple pie? YUM! Pumpkin cookies? Yes, please!), I also get really excited when I start seeing butternut squash in the stores.

I’m not sure when I first tried cooking butternut squash for my family, but it quickly became a staple of our autumn pantry. I love making this Winter Squash soup (Pumpkin-Butternut Squash Soup) by the Food Network’s Ina Garten. However, I think my absolute favorite way to enjoy this seasonal veggie is to simply dice it up and roast it, usually along with some sweet potatoes and apples.

The other night I was ready to make this sweet combination as a side for our dinner, but I couldn’t remember at what temperature I usually roasted it. So, I searched online for “roasted butternut squash.”

The first recipe I checked out was one for cinnamon roasted butternut squash from Chew Out Loud. Suddenly, I was ready to spice up my usual recipe a little bit. 🙂

While their recipe calls for adding brown sugar to their squash, I didn’t since I already add sweet potatoes and apples to the mix. I didn’t want to make my dish into too much of a dessert. I also had to adjust the oil and seasoning a bit since I had more to roast overall.

The resulting Roasted Cinnamon-Spiced Butternut Squash with Sweet Potatoes and Apples was delicious! (Even my little picky eater Josiah ate it well.) Not only is it a tasty side, but it is simple and healthy! This is a perfect dish for any meal throughout the fall and winter and would be a great new addition to your Thanksgiving table.

Note: Don’t let the prepping of the butternut squash intimidate you. It seems tricky, but it’s not that bad. I’ve learned that if you microwave it for a few minutes, that will make peeling it much easier. It will even help make it easier to cut up (butternut squash is a hard squash). Life in Lape Haven - Junk Cereal Saturday: How an Idea from My Hubby Makes Breakfast Easier Every Day. Mornings have enough reasons for stress and kids arguing. What cereal my boys can eat for breakfast isn't one of them. A rule that my hubby and I decided on before our boys were born helps us keep them making healthy choices without missing the fun and makes our Saturday morning memorable and special.

Recently a mom friend of mine was talking about her kids and how one of them wanted a certain not-so-great cereal all the time – breakfast, lunch, snack, dinner. Having a picky eater myself, I know that struggle is real. However, it made me appreciate a rule about cereal that my hubby and I decided on for our home before our boys had ever had any.

When Brad and I first met, he was not a breakfast eater. However, once we were married, he got into the habit of at least having something, mostly because I HAVE to eat breakfast, and he would have breakfast with me.

At some point, either when I was pregnant with Elijah or shortly after he was born, Brad and I had a discussion about breakfast and what cereals we would allow our children to eat. Being the more health-conscious parent, my rules were no artificial dyes and lower sugar content, with more natural, nutritious, and organic options being preferred.

Brad, however, made a stand for allowing fun cereals, or what we call “junk cereals,” at least on occasion. Junk cereals would be all the ones you always wanted as a kid – you know, they have an engaging mascot on a brightly colored box that usually advertises an exciting “prize” hidden among the not-good-for-you-at-all-but-delicious-and-sugary O’s, flakes, or clusters.

Bringing in a good dose of nostalgia to his arguments, Brad painted the picture of waking early on a Saturday morning and enjoying that type of cereal while watching cartoons in your pajamas.

“They at least need that option on Saturday,” he stated. He wanted his children to have those fun memories that he did. Either that, or he just wanted that kind of cereal for himself. Haha. I think it was both.

So we reached a compromise: Junk Cereal Saturday.

Since that day, our boys have grown up knowing that Sunday through Friday, they have to pick from our healthiest options on the days we eat cereal (Cereal or oatmeal are usually the go-to, especially on school days. Bigger breakfasts with eggs, pancakes, or something more involved happen when I have more time in the mornings.)

We have no whining or begging for those “fun” cereals because they know the Junk Cereal Saturday rule, and like anything else with parenting, when you lay out the guidelines and stick to them without wavering from the start, the kids are less likely to push those boundaries. The few times that the boys have asked for a junk cereal during the week, all we have to do is remind them that that particular cereal is for Saturday.

Because of this, Saturday is extra special for our boys, and they get genuinely excited when they remember that it’s Junk Cereal day. They get to indulge in the fun cereals, and they love it.

Of course, being the sneaky Mom that I am, I still make sure that even our “junk cereals” are relatively healthy. There are so many options now for more natural, dye-free cereals that look fun and taste yummy that it’s pretty easy. We love Kashi, Barbara’s, Cascadian Farms, Mom’s Best, and Aldi’s Simply Nature. Since they only eat junk cereal once a week, it lasts, too, so even if it’s not on sale, we aren’t spending too much. (But I always stock up when good cereal is on sale or I have a coupon!) I’ve even had the boys ask me if a certain cereal is “junk cereal,” hoping that it is, and I just say, “Sure. It can be,” even when, in my mind, it isn’t. Haha.

Knowing that they get to look forward to a special cereal on a day that they can really enjoy it makes my boys’ choices (and attitudes) in the morning easier every day of the week. Knowing that my boys aren’t filling up on empty calories and junk that their growing little bodies don’t need (and we don’t need either) makes my morning easier. Having a guideline set out that we all know and accept makes the mornings easier for us all.

And yes, on most Saturdays, you can find my boys in their pajamas, munching on their special cereal, and watching their cartoons with Mommy and Daddy, enjoying Junk Cereal Saturday to the fullest.

Cinnamon Sugar Kettle Corn

Life in Lape Haven: Cinnamon Sugar Kettle Corn recipe. A quick, tasty, and fairly healthy stovetop popcorn recipe using coconut oil.

For some reason autumn always makes me want popcorn.

It might be all the fall festivals with the warm scents of kettle corn wafting through the air. It might be that we’re more likely to be cuddling up on the couch for a movie now instead of playing outside as long as we can. It might be the simplicity of the treat.

It might just be that I really like popcorn.

According to family lore, my first steps were taken to get to popcorn, and I was busted as a little one eating strung popcorn off the Christmas tree (there’s even photographic evidence).

So popcorn and I go back a few years…or more.

Then several years ago I was helping at a youth gathering at a fellow youth leader’s home. We often had youth group at their home because they had a large house and loved hosting people. The leader’s wife always had something special for us – fancy teas and hot chocolate, homemade waffles after a sleepover, and stovetop kettle corn at this particular meeting.

She had a funny pan with a crank that amused us all, but it produced the tastiest popcorn ever! Plus she had all kinds of variations she could make, and they were all good.

I immediately wanted a Whirley-Pop Stovetop Popcorn Popper for myself, so I could have yummy, crunch, sweet, and salty kettle corn and not have to share it with a dozen hungry teenagers.

It would be a few years later before I got my wish when I found a barely-used Whirley-Pop at the thrift store.

After that, I went on a hunt for recipes, finding all kinds of ideas online. I made plain salted popcorn, sweet kettle corn, caramel corn, and recently, pumpkin spice kettle corn. However, my very favorite (and my boys’ favorite, too) is Cinnamon Sugar Kettle Corn.

It’s super easy to make, and even easier to enjoy. It’s so good that I have to stop myself from eating the entire bowl…pretty much every time I make it.

I make popcorn often, especially in the fall and winter. It’s a fairly healthy, cheap, and really quick snack to make. In not much longer than it takes you to microwave a bag of popcorn, you could stovetop-pop a huge bowl of way healthier, tastier popcorn.

My recipe for Cinnamon Sugar Kettle Corn has come from some trial and error and tweaking of other recipes I have found. As always with my recipes, feel free to get creative and make it your own. If it comes out better than mine, please let me know!

Also, I imagine you can make this the old-school way with just a regular pan on the stove. I never have, but it should work just fine. Or you can scour your local second-hand stores in hopes of finding one, although I haven’t seen another one since the day I got mine.

Amazon carries the Whirley-Pop Stovetop Popcorn Popper, though, so you could get it brand-new or add it to your Christmas wish list.

However you can make it, I know you’ll enjoy it. Whether or not you share it or eat the whole bowl yourself is up to you.
